Why are Capsicums different Colours?
That's right, the different colours are simply caused by the fruit ripening 😉 All Capsicums start out green, and grow to a mature size before changing colour. The colour change is caused by the breakdown of chlorophyll — which can cause them to turn white, lilac or purple before fully maturing to yellow or red.
